"I tend to use blue as this is usually a safe colour for presentations and when developing web pages if you have a colour deficiency - blue, pale colours. When items are highlighted, the text goes white on a blue background."

'Testing the Readability of Web Page Colours' is an article on the subject but it is also possible to use an automated Colour Contrast Analyser developed by Juicy Studio that makes colour selection easy. There is also the Accessibility Colour Wheel
