"For one of our modules, we have to build web pages and display information, so I do do that - I do Powerpoints...I have slowed down the mouse speed and use an optical mouse, so when I got my computer, I asked specifically for a plug in mouse rather than a touchpad."
To slow down the click speed I go into Control Panel (in classic mode) and choose Mouse Properties - Button tab there you will find a slide bar to set the speed - There are instructions on the Microsoft Accessibility tutorials

"I have slowed down the mouse speed. With my shakes I end up double-clicking everything. Also, I can only use an optical mouse and I can’t use a touchpad..."

Simplify using your mouse: change double-click to single-click. (Windows XP) You may find it easier just to hover over a folder to open it or to use one click instead of two. Windows Vista changing folder options are similar.
